Apple Bran Muffins

Makes 12 muffins
1 cup whole wheat flour
¾ cup wheat bran
¼ tsp salt
¾ tsp baking soda
¼ tsp nutmeg
½ tsp cinnamon
2 tsp grated lemon peel
¼ cup orange juice
¾ cup buttermilk
1 egg, lightly beaten
¼ cup molasses
1 TB oil
1 cup apple sauce
1 large Granny Smith apple, peeled & chopped
1. Preheat oven to 350
2. In medium bowl, combine flour, bran, salt, baking soda, nutmeg, cinnamon, & lemon peel.
3. In another larger bowl, combine juice, buttermilk, egg, molasses, oil, & apple sauce; stir into flour mixture. Fold in apple.
4. Pour into greased muffin tin; bake 25 minutes
