Brown Rice Pizza

Makes 4-6 servings (slightly modified by Aimee)
Crust:
3 cups cooked brown rice
1/2 cup shredded mozzarella
½ cup sesame seeds
2 TB parmesan cheese
2 eggs, beaten
Sauce:
3 TB butter
3 TB flour
1 ¼ cups milk
½ tsp paprika
Topping:
1 crown broccoli, chopped & steamed
and/or other desired toppings
8 slices Muenster cheese
½ tsp oregano
1. Make crust: Preheat oven to 400. Combine all ingredients & pat into the bottom & sides of a greased 13 x 9 baking dish. Bake 20 minutes.
2. Make sauce: Melt butter in small saucepan; stir in flour. Slowly whisk in milk & paprika; ctir over medium heat until sauce thickens
3. Arrange toppings over crust. Pour sauce evenly over toppings & crust. Arrange Muenster slices on top, sprinkle oregano, & broil until cheese melts.
