Spicy Blackened Tofu

Makes 8 cutlets
14 ounces firm tofu, drained & pressed
1 tsp. paprika
½ tsp. each: dried minced onion, garlic powder
¼ tsp. each: salt, thyme, oregano, cayenne pepper, black pepper
2 TB butter, melted
1. Cut tofu into 8 rectangular slices
2. In a bowl, combine all the spices
3. Brush each tofu slice on both sides with melted butter & cover in spice mixture
4. Fry until crispy on both sides, about 8 minutes per side
