Cinnamon-Tofu Muffins

Makes 12 muffins

1 cup whole wheat flour
1 cup rolled oats
2 tsp cinnamon
½ tsp salt
2 tsp baking powder
¼ tsp baking soda
8 oz. soft tofu
2 eggs
¼ cup oil
½ cup honey
3/4 cup apple sauce
¼ cup raisins (optional)

1. Preheat oven to 425.  In large mixing bowl, combine flour, oats, cinnamon, salt, baking powder, & baking soda.
2. In blender, puree the tofu, eggs, oil, & honey until smooth; pour into dry ingredients & mix well. Fold in raisins & apple sauce (batter will be stiff).
3. Fill greased muffin tin cups 2/3 full; bake 15 minutes
