Muscle Muffins


Source: Raising Vegetarian Children
Makes 18 muffins


1 cup whole wheat flour
1 cup unbleached flour
1/2 cup protein powder
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
2 ripe bananas
¾ cup milk
¼ cup oil
¼ cup molasses
¼ cup maple syrup
2 tsp apple cider vinegar
½ cup apple sauce
1 cup raisins


1. Preheat oven to 350
2. In medium bowl, combine flours, protein powder, baking powder, baking soda, & cinnamon
3. In larger bowl, mash bananas; stir in milk, oil, molasses, syrup, vinegar, & apple sauce
4. Add flour mixture to banana mixture; stir until just blended, then stir in raisins
5. Fill greased muffin tins & bake for 25 minutes or until cooked in middle
